Every operator wants to devote as much space as possible to the dining area, where extra seats mean extra income. But to get something, you often have to give something, and that usually means giving up valuable back-of-the-house storage space. Imagine the storage problems small restaurants and diners must deal with. That's exactly what the consultants at Cini-Little International were faced with when asked to create storage space at four Silver Diners in Maryland and Virginia.
The diners are the brainchild of Bob Giaimo, who opened his first Silver Diner four years ago in Rockville, Maryland. It's an original 1950s diner resurrected for the '90s. The next two--one in Laurel, Maryland, and one in Woodbridge, Virginia-were re-creations designed by Charles Morris Mount. The most current Silver Diner is another re-creation attached to a shopping center in Towson, Maryland. Each seats about 200, meaning the lion's share of space is used up front.
