THE program for this July's Masterclass foodie fest, held at the Hilton Brisbane and sponsored by The Courier-Mail, is taking shape with three top international talents confirmed. On the bill is Pascal Proyart, above, from London's One-O-One restaurant in fashionable Knightsbridge, a seafood aficionado whose cooking has been described by one critic as "a model of Gallic precision and creativity". Jetting in from the US will be David Pasternack of Esca, winner of the prestigious James Beard Foundation best chef in New York award for 2004. Pasternack is also a seafood exponent, although at Esca the influence is southern Italian. The third in the international line-up is French chef Didier Corlou, a Vietnam resident for 14 years who has been instrumental in lifting the profile of Vietnamese cuisine around the world. He was recently honoured by the Vietnam Folklore Association and his cookbook Vietnamese Cuisine took out three gongs in the Gourmand World Cookbook Awards announced this month in Sweden. The champagne star at Masterclass will be Veuve Clicquot, while local chefs to show their prowess will be Javier Codina (Gianni's), Brad Jolly (Lat 27) and Paul McGivern (Rapide). Masterclass will be held on the weekend of July 30-31.
